Paule, Kevin, and their teams do amazing work at the farm, and we’re always impressed by the unique profiles they manage to create. They bring out tropical, sweet, and floral notes in a way that’s incredibly expressive and easy to read in the cup.\u003cbr\u003eWe picked their shortest version of a carbonic maceration process. They use mossto from the previous batch, which allows them to work only with endemic yeasts, no external strains involved.\u003cbr\u003eThis shorter fermentation gives us a super clean cup, very sweet, but still dynamic and tropical.\u003c\/p\u003e\n\u003cp\u003eIf we had to describe it in colors, it would be red, orange-yellow, and pink.
