We’re super happy to present a new collaboration with our friends at Motors!
For this one, we selected an incredible lot from Mikava. Paule, Kevin, and their teams do amazing work at the farm, and we’re always impressed by the unique profiles they manage to create. They bring out tropical, sweet, and floral notes in a way that’s incredibly expressive and easy to read in the cup.
We picked their shortest version of a carbonic maceration process. They use mossto from the previous batch, which allows them to work only with endemic yeasts, no external strains involved.
This shorter fermentation gives us a super clean cup, very sweet, but still dynamic and tropical.

If we had to describe it in colors, it would be red, orange-yellow, and pink. The finish reminds us of “Arlequin”, a classic french candy with bright, fruity, and slightly tangy notes.


Process:

Harvested on Monday and Tuesday the 27th and 28th of January.
125kilos of hand selected cherries went through C02 fermentation in sealed plastic tanks. 
9 days of drying on raised beds in solar dryer, then transferred to mechanical dryers for 10 days.
